Quick Prawn and Chorizo Stew – 2 meals
1 garlic clove
1 red onion
1 tbsp. smoked paprika
1 packet of raw king prawns
½ chorizo ring
1 400ml can chopped tomatoes
1 large bag of spinach leaves
Slice the chorizo into small chunks and fry on medium heat in a shallow pan. Slice the onion and garlic and add to the chorizo to soften for 2-3 minutes.
Stir through the smoked paprika power, cook for 2 minutes then add the chopped tomatoes. Fill the empty tomato can half with water and pour into the stew.
Turn heat down to simmer and cook for 15 minutes to
reduce the stew. Stir through the raw prawns and spinach, pop the lid on the pan and steam to wilt the spinach. Add more water depending on the consistency you want for the stew. Season to taste and serve.
