Chicken and Vegetable Chinese Satay Stir Fry
1 tsp. coconut oil
1 tbsp. crunchy NO sugar peanut butter (Whole Earth is a good brand)
1 tbsp. sweet chilli sauce
1 tbsp. soy sauce
2 tbsp. desiccated coconut
1 tsp. Chinese 5 spice
1 packet of mixed stir fry vegetables
1 chicken breast
Chop the chicken breast into chunks and put in a mixing bowl. Sprinkle with Chinese 5 spice, stir and leave to one side. Heat coconut oil in a wok or deep pan on a high heat and add the chicken breast chunks.
Fry for 5 minutes then add the vegetables, lower the heat and stir fry for 5 minutes. Whilst the vegetables are cooking, add the peanut butter, sweet chilli sauce and soy sauce into a bowl and mix together.
Once the vegetables are cooked, make a well in the centre of the wok and pour in the peanut sauce. Cook out for 2 minutes just to warm through, then stir through the veg and chicken. Once all coated in sauce, stir through the desiccated coconut and serve.
Tip: the desiccated coconut will expand slightly once stirred through which will give the
texture of rice.
